Gluten Free Baked Falafel

Baked Falafel

” Baked falafel  for guilt free eating.  Serve with Tzatziki or Tahini Lemon sauce. Falafels can also be served inside warmed pitas , with cucumber, hummus, spinach, and Tahini Lemon Sauce. “


Ingredients

3 cups garbanzo beans ( I make my own  and reserve about ½ cup of the liquid)
¾ to 1  cup  gluten free breadcrumbs
½ cup liquid from garbanzo beans
3 carrots
1 red onion
bunch of parsley
bunch of cilantro
1 stalk celery
4 cloves garlic
1 tbsp cumin
½ tbsp coriander
2 tsp paprika
2 tsp hot chilie powder
salt and pepper to taste

 

Directions

Process parsley and cilantro in food processor. Set aside. Process garlic, carrots, onions, celery , salt till finely chopped. Add garbanzo beans, liquid and process. Mix with cilantro-parsley, hot chilies , pepper,  and breadcrumbs. Season with salt some more as needed. Mix well. It too dry, add more liquid. If too wet, add more breadcrumbs.

You can refrigerate the mixture overnight  in a gallon ziploc bag at this point, like I do, if I am expecting company the next day. Time saver.

Form into patties if baking and golf-size ,balls , if you are frying. To bake, bake at 425 degrees for 10 to 12 minutes on one side, and another 5 to 7 minutes on the other side or till golden brown.

Gluten Free Vegetable Parmigiana

“This dish  is reminiscent of eggplant parmigiana and vegetable lasagna. This version is packed with all the vegetable goodness of nutty cauliflower and zucchini. The anise taste of fennel is such a refreshing twist and imparts a unique flavor to this dish. “

Ingredients

Extra Virgin Olive oil, for greasing and drizzling
Sea salt and freshly ground black pepper
2 large eggplant, cut into 1/4 to 1/2-inch thick slices
2 fennel bulbs, trimmed and sliced into 1/4-inch thick pieces
3 zucchinis, sliced
½ of a cauliflower head ( chopped finely)
1 (28-ounce)  can of marinara sauce
3 cups shredded mozzarella cheese
1/2 cup grated Parmesan
½ cup grated Parmigiano Reggiano
1 cup plain  homemade gluten free bread crumbs (Process brown rice bread or bread of your choice, with the S blade in a food processor.  Toast in oven for 10 to 15 minutes at 350 degrees)

 

Directions

Preheat the oven to 375 degrees F. Oil a 13 by 9-inch glass baking dish.

Grill the vegetables for 3 to 4 minutes each side until softened or bake in a 375 degree oven for about 15 to  20 minutes or till soft. Do not bake zucchini not cauliflower.

Spoon about ¾ cup marinara sauce over the bottom of the oiled baking dish. Arrange half of the eggplant slices on the bottom of prepared dish. Spread a cup of  cauliflower on top of eggplant slices.  Sprinkle with ¼  cup breadcrumbs. Sprinkle with  a handful of  mozzarella cheese , ¼ cup  Parmesan cheese, and ¼ cup Parmigiano Reggiano. Arrange the zucchini  and half the fennel slices in a single layer on top of the cheese.  Spoon 3/4 cup of marinara sauce over the zucchini. Sprinkle ¼ cup breadcrumb. Evenly spread  1 cup of mozzarella cheese , ¼ cup Parmesan cheese, and ¼ cup Parmigiano Reggiano on breadcrumbs.  Arrange the rest of the fennel and eggplant  slices on top of cheese and cover with the remaining sauce. Sprinkle  the remaining cheese. Scatter the rest of the bread crumbs over the cheese and drizzle liberally with oil. Bake covered for 30 minutes , then 15 minutes, uncovered,  or until the top is golden and forms a crust. Cool out of the oven for 10 minutes before serving.

Happy Mother’s Day!

My 3 boys last night gave me this menu below , that they made for Mother’s day. They asked me to put in my order before bedtime.

Choices were:

1.) Omelette with goat cheese
2.) Whole wheat english muffins with goat cheese or
Warmed cinnamon rolls ( leftover from hubby’s baking yesterday)
3.) Vanilla nut Teeccino coffee or Tea ( ‘cuz I can’t do caffeine anymore )
4.) Green juice or fruit smoothie (“Very promising.” )
5.) Unlimited Foot massage, head massage,  & hand massage for the day;  just have to snap fingers & they have to stop everything they’re doing and come  massage me. ( “Now you’re talking!”)
6.) Bonus: Pancakes but you have to help us make it ‘cuz we don’t know THE recipe

p.s. We will be very good, mommy!! That’s our word!

Dunno what’s with the goat cheese ‘cuz we have other kinds I like better.

Anyway, I ordered room service in bed and hoped for the best. I was all excited for my big day.

My eyes lit up at the massage part of the menu. I ordered that first! Oh you betcha, I was gonna snap those fingers till they were exhausted.

I asked for Green juice before church ‘cuz I feel like I am a little under the weather. I wanted in it — celery, carrots, beet, beet tops, ginger, turmeric, malunggay powder, a collards leaf, flax seeds, hemp seeds or cashews, & raw Apple cider vinegar. Too complicated a recipe & too many ingredients for them to remember , I found out soon enough.

I said I wanted the omelette after church please, with tomatoes, onions , with NO goat cheese. English muffin with butter & jam , with NO goat cheese again, & Teeccino coffee with NO goat cheese.

Outcome: Coffee didn’t arrive till end of the omelette meal ‘cuz the Cook can’t multi-task. They forgot the tomatoes & to salt the omelette, though I had all the ingredients laid out there, that I prepped for them myself — the cut up onions, washed cherry tomatoes, etc. I was trying to make their job easier. The omelette they made for me was filled and topped generously WITH goat cheese ( but of course, how could you expect less!). I squealed with delight , nevertheless, since that is my job. I ate the omelette with utmost enthusiasm, even with the goat cheese that I didn’t order…

The coffee server (the 8 yr old) spilled coffee on the bed & honoree. Like a cherry on a sundae.

As I was eating, they wanted to know when I can  make those pancakes (take note that it’s my so called bonus from them, but which I have to make).

Green juice wasn’t room service, but rather  a “To go” beverage ,  on the road to church . The Breakfast crew , you see, was busy with card making & forgot, though I did remind all three of them, first thing in the morning about my order. In their hurry, they managed to forget 3/4th of the ingredients too, that I asked to be put in the juice.They put in the juice a bunch of cilantro which I didn’t ask for , just ‘cuz it’s green. I knew I should have followed my mother instinct & ordered the fruit smoothie last night, knowing them , and since that’s hard to screw up. We were 20 mins late for church & the kids had the hardest time downing their green juice (and so did I). “It just isn’t the same as mommy’s !” , they both chimed in. Did I mention that I spilled green juice on my white pants too. As for the boys’ lack of focus and failure to remember details , I attribute it to being a boy thing. I have to stop giving them too many details to remember. It just doesn’t work. They are not women.

It’s almost 5 p.m. and I just got up from a 3-hour nap. That was luxurious , but oh no, that’s half a day of missed massage opportunities! Tsk. Tsk. The good thing is, they don’t have a lot of time to “mess up” the day more, or so I think. The 3 just left for the park, but not before telling me they wanted me to reheat the eggplant parmigiana from last night, in the oven, in time for dinner, plus if they could have the bonus pancakes for dessert. How quickly have they forgotten that it’s my day off?

On the brighter side, I did get to lounge in bed for most of the day, with books , magazines, internet, & a long nap. Lotsa nice card and coupons. I had a massage when I woke up this morning. Bliss. Surprisingly today , too, I heard no screaming, no sword fighting, nor running up & down the stairs, which often punctuate my precious sleep.

I told them that I wanted a rain check tomorrow ‘cuz I didn’t get my full day off and I slept for most of the day & they had to go to the park, so I couldn’t redeem my massage coupons.

Might have looked like an F or D, at the most, if you were to grade their report cards for the day, but in my book, it was an A+ , just for trying hard, for it was all seasoned liberally with love & hugs, covering all faults. The best meal I’ve had in ages , I gotta say. The one that counts. I felt special and I had a cool mother’s day to remember. I guess, to my boys, I will always be mommy —the mommy they run crying to with their latest battle wounds & the mommy who lives in the kitchen , whose bed & breakfast is open to them, day and night, 24 7. The mommy who can never take a full day off. Makes my heart sing.  I am Queen of my kingdom indeed. Motherhood is the toughest job in the world, yet at the end of the day, I call myself blessed.
